Swedish black caviar sold out - now production is being expanded
Published December 15, 2020
Siberian sturgeon glide through pools in Småland's Strömsnäsbruk, where Sweden's most luxurious food, black caviar, is crafted using these prized fish. Arctic Roe of Scandinavia (Aros) spearheads this production.
For those seeking exclusive caviar for the New Year, regrettably, this year's stock has been completely sold out. Consequently, Aros is gearing up for significant production growth in 2021 and beyond, aiming to boost output by at least 50%, as stated by CEO Torbjörn Ranta.
Having engaged in business ventures in Siberia's oil and gold sectors for over two decades, Torbjörn Ranta developed an interest in caviar production. Ola Brandt, site manager at Aros in Strömsnäsbruk, clarifies that the company utilizes a unique method where sturgeons are not slaughtered but rather harvested for their roe.
Torbjörn Ranta highlights that the global farmed caviar market hovers around 350 tonnes annually, a figure on par with the roe harvested in northern Scandinavia. However, in terms of value, black caviar races ahead, commanding ten times the price.
Aros has set its sights on capturing a larger share of the Swedish market before expanding across Scandinavia and globally.
When it comes to savoring black caviar, Torbjörn Ranta advises enjoying it as purely as possible, steering clear of added elements like lemon and onion for an optimal experience.
