Production of Russian caviar from Strömsnäsbruk could become a reality as early as next year. This is where Siberian sturgeon is farmed for caviar production – one of the world's most expensive foods.
Around 500 Siberian sturgeon swim around in four pools in the old mill premises at Strömsnäsbruk in Markaryd municipality. The sturgeon were brought from Latvia and will eventually be used for caviar production.
– The goal is to produce around 1,000 kilos of roe per year and have up to four tons of fish in the baskets, says Ola Brandt, who shows off the operation.
This is a pilot project on a small scale and the project is still some way off from its goal. Right now, around 250 kilos of fish are swimming in the so-called bags.
