Arctic Silk is our latest caviar product. It is produced like Arctic
Tradition and Arctic Pearl on the live-harvested rum from our Siberians Sturgeons (Acipenser Baerii).
Arctic Silk caviar is also stabilized using a unique method without heating. But the exact stage of maturity of the rum grains at harvest determines how the texture will turn out in the final product. The rum grains from Arctic Silk lack Pearl's "pop" and instead melt on the tongue in a silky or velvety manner. Hence the product name.
Here, as in the sister products, "Tradition" and "Pearl", there are mineral ocean flavours with a toss of fresh oysters that are broken off with a buttery creamy nuttiness and a solid wave of umami, which persists in the aftertaste. The salinity is 3.7%.
Live-harvested rum grains are larger in size than the corresponding grains from butchered fish. The best-before date is approximately 6 months from the date of production a storage temperature of no more than +4 degrees Celsius.
